Snickers Ice Cream Bars and Bites (vegan, raw)

Happy Friday!! I am so excited to share these awesome little bites of Snickers goodness with you, my friends! I mean, FROZEN… SNICKERS… BITES….

Deep breaths… don’t freak out. Hold it together.

Don’t mind me, sometimes I have to talk myself down just so I can focus on typing coherent, logical, sentences. Maybe I’ve had a bit too much chocolate.

HAHAHA… Nahhhhh.

Three ingredient raw chocolate encapsulates gooey homemade date caramel, peanuts, and a cool, frozen, (n)ice cream center. These cold candy bar bites are easy to put together. I can attest to this fact as I have made them three times now. Oh yes, I’ve made and eaten a lot of Snickers bites this week.

I don’t hate it.

These sweet babies are:

  • refined sugar-free
  • dairy-free
  • vegan
  • gluten-free
  • made with whole-food ingredients
  • and can be made completely raw

You do not need any special equipment to make these, no food processor, blender, or any other gadget. These can be made with dairy-free dark chocolate bars or by mixing up the 3-ingredient chocolate. The date caramel can be mixed in a food processor or by hand. They can be bars or bite-sized truffles. You can drizzle or dunk. I’m sharing a few ways to make these, and I’ll let you decide.

These taste just like a Snickers ice cream bar. I would not lie to you. Whether you dunk ’em, drizzle ’em, make your own chocolate, or go the melted chocolate bar route… just do it. You’ll be so glad you did. Now go hustle your bustle into the kitchen and channel your inner Willie Wonka. It’s time for CHOCOLAAAAATE!!!

Frozen Snickers Nice Cream Bites 

Ingredients:

  • 2 large bananas, peeled
  • 1 recipe of my Best Date Caramel Ever (see instructions below if you do not have a food processor) you’ll need 15 soft medjool dates, almond butter, coconut oil, salt, and vanilla extract
  • 1/3 cup roasted peanuts, crushed or jungle peanuts (if you want them to be 100% raw go for the jungle peanuts)
  • 2 – 3.5 oz bars of dairy free dark chocolate, or 1/2 cup melted coconut oil + 1/2 cup cacao powder + 1/4 cup coconut nectar or maple syrup (use this option for raw bites)
  • large cookie sheet lined with parchment paper

Instructions:

  1. Make your caramel. Either follow the instructions for my Date Caramel using a food processor, or if you making by hand, place 15 pitted dates in a bowl and cover with hot water (I boil mine in the kettle). Let soften for about 3 min. Drain the water very well, and return dates to the bowl. Add 1 tbsp runny almond butter, 1 tsp vanilla, pinch of salt and 1 tbsp of coconut oil (optional – you can leave this out but it does add a buttery flavor). Now use a sturdy fork and mash, mash, mash away. Use your muscles! It works! Set your caramel aside.
  2. Prep your nanners. You can either slice them into thick rounds for bites, or make 2 inch rectangles by slicing a thin strip along the top and bottom for “bars.” Place the thick slices or rectangles on a cookie sheet lined with parchment paper.
  3. Add a teaspoon dollop of caramel to each banana, and sprinkle crushed peanuts on top. Press down gently so they stick in the caramel. Now place the pan in the freezer for about an hour.
  4. Melt/make your chocolate. Melt the dark chocolate bars using a double boiler (I put a small pot inside a larger pot with 3 inches of water and heat over medium heat). Pour the chocolate into a deep glass bowl. Or make your raw chocolate by gently melting the coconut oil and adding cacao and raw coconut nectar, whisking until smooth. Pour into a deep bowl.
  5. Take out your now frozen banana caramel bites and either dunk them in the chocolate syrup, and roll them around to coat evenly, or just dunk the bottom half and drizzle chocolate on top. Put them back on the parchment paper and pop into the freezer and store there until ready to eat. You can repeat the dunking process after 10 minutes if you want a thicker chocolate shell.

Notes:

To make fully raw, use raw almond butter in the caramel, jungle peanuts, and make the 3 ingredient chocolate using raw cacao.

If the bites have been in the freezer for several hours or longer, you may want to let them sit out at room temperature for a few minutes so they aren’t too hard. Don’t let them sit out for too long though or they will start to melt.

    Oh my goodness, I got butterflies reading this! I’ve got people coming over for dinner in a couple of hours- wonder if I could quickly make them? Fingers crossed the bananas freeze in time! Thank you for such an awesome recipe!

      Yay! So glad you liked the recipe, and I think you should be able to make them in time!

      Here’s what I would do…mix the caramel and dollop that on your bananas and sprinkle with peanuts before freezing them for about an hour. Then you can have your chocolate ready to go and either dip them in and coat the bananas or drizzle them. Drizzling would be your fastest option. The chocolate will harden right on contact so they could be eaten immediately! otherwise keep em in the freezer til your guests are ready for dessert! Hope everyone loves them!! xoxo

      Hi Nicole, that is a good question, ours never last any longer than maybe 3-4 days (because we can’t keep our greedy little fingers off them!). I would think they’d be ok for a couple weeks or maybe even longer, but for best taste I’d probably eat them within a week.

      Keep in mind you’re visiting the site of a person who has done her research and is in the camp that legumes ARE good for you. Actually they are one of the biggest predictors of longevity. That being said, peanuts aren’t something I believe we need to load up on each day, unlike fruits and vegetables. However this is a treat. And the peanuts can be traded for a tree but if you like. (Which I also believe ARE good for you in moderation). Either way, this is a much healthier treat than anything you could buy at a store or any conventional refined sugar and dairy filled dessert.

      We’re all entitled to our own opinion, but please think twice before posting negative comments on someone’s blog.

    Ok, I love the idea and I want to make these, but what I am thinking is… doesn’t freeze the banana into a stone? Or do you have to defrost them a bit before eating?

      Haha that is a good question, I don’t find that the banana gets too rock hard, what it might get after sometime is a bit icy. So I do like to let them sit on the counter for 5 minutes if they’ve been in the freezer a few days, they soften up pretty fast. Honestly though, ours never last that long! They do taste the best overall the first day or two. Another popular one we also like to make is banana pops, where we freeze like an entire banana and dip it in chocolate. These snicker bites are smaller so I don’t find they get as hard as say a whole banana. Either way, a few minutes of defrost time helps with any frozen banana treats! 🙂 hope that helps.
