Hi all! I’m popping in today to share a couple of fun tidbits! First off, I want to direct you to an interview I did with the lovely Heidi Kokborg, journalist and creator of the blog, The Sparkling Darling. I’ve gotten to know Heidi through our blogs, and it’s been great getting to know this like-minded lady! Her blog features travel adventures, words of wisdom, beauty products, book reviews, and plenty of delicious healthy recipes. When Heidi approached me with the idea of interviewing me, I was so surprised and beyond flattered! I rarely delve into my personal thoughts about plant-based diets and a vegan lifestyle here on the blog, which isn’t because I don’t want to, I’m just way too busy talking to you about food and recipes! Heidi asked me all kinds of great questions about my journey to a plant-based diet and cruelty free lifestyle. super c smoothie 2I thought I’d also quickly share a fun smoothie recipe, since it’s almost the weekend and the perfect opportunity to try a new blend! This is a favorite of my daughter’s (and mine). It’s chock-full of vitamin C and other inside-out skin beautifiers like hydrating coconut water and super-powered chia seeds.

I first shared this recipe on Instagram a few months ago, and I’ve been looking through my photos and thinking, “you know I should really put some of these smoothies on the blog!” So here you go, a fabulous strawberry and citrus smoothie to kick off the weekend!

Super C Smoothie

  • 1 cup of coconut milk
  • 1 cup of coconut water
  • 2 clementines*
  • 1 navel orange
  • 2 cups of frozen strawberries
  • 2 Tbsp chia seeds

Blend everything until smooth. Makes 2 servings.

*Substitute an extra navel orange for the two clementines

    The smoothie looks so good – I need to try it next week (need to go to the grocery store first – I am out of coconut milk!!). It looks like a real kids smoothie. I am guessing your daughter loves it! 🙂

      You are welcome Heidi! Every word is true 🙂 This is one of my daughter’s favorites for sure! She loves anything with strawberries; actually so do I! And I know you understand the delicious combo that is strawberry+coconut! I think you’ll love this one 🙂

      Thank you! It really is a tasty duo and the coconut milk takes it right over the top! I appreciate your interest in the interview; I don’t talk much about personal stuff on the blog so it was a good exercise in opening up for me 🙂

        It looks like the UK is in for a cold March! 😦 So once it gets a little warmer, we’ll definitely be trying this! We loved reading it. That kind of interview can be a bit daunting, but you did a great job! I actually have some questions about skincare to throw at you (as I’m looking to make some changes myself).
