Starfruit Green Smoothie

My third and final smoothie in this series features a fruit I’ve never tried in a smoothie before. Starfruit. I’ve often overlooked this uniquely shaped produce in the grocery store. Other than as a garnish in a fruit bowl, I was never quite sure what to do with it.

After hearing the sad news last week, “Starman” was the song I listened to the most. The lyrics make me smile. Even my daughter loves this song, and when the chorus says “there’s a staaarmaaaan waiting..” she sings triumphantly, “in the sky!” and begs to dance and be spun around. As the song says, “Let all the children boogie,” and that’s precisely what we did.

When I saw a huge display of starfruit on sale at our supermarket a few days ago, I knew I needed to buy some and experiment. I’m so glad I tried starfruit in a smoothie. It is crisp and refreshing and combined with a healthy dose of greens, and a handful of other brightly flavored fruits, it tastes like a vacation in a glass. Starfruit is a hydrating fruit, full of fiber, vitamin C, and antioxidants. One medium fruit has about 70% of your vitamin C needs for the day. You can keep it juicy and refreshing or add in dairy-free coconut yogurt or coconut milk for a creamier smoothie.

Starfruit Green Smoothie

  • 1 1/4 cup coconut water
  • 1 medium to large starfruit, sliced
  • 2-3 handfuls of baby spinach
  • 1 large kiwi, peeled, or 1 navel orange, peeled
  • 2 tablespoons( or about 1/4 of a small) avocado
  • 2 frozen bananas
  • handful of frozen pineapple and/or frozen mango

garnish: 2 sliced starfruit, or zig zag cut kiwi

Instructions: Blend everything in a high speed blender until smooth. I like to blend the room temp ingredients and liquid first, then add the frozen and blend again until smooth.

For a creamier smoothie, use more avocado or add coconut yogurt or coconut milk.
