Glowing Shamrock Smoothie

This sweet minty smoothie is not only the perfect green beverage to sip for St. Patrick’s Day, but for the rest of spring and the warm days of summer too. It’s frosty, fruity, and sweet with a big minty punch. While my Copycat Shamrock Shake is creamy and indulgent, this smoothie is light and refreshing, loaded with antioxidants and ultra-hydrating ingredients.

One of my favorite plant-based beauty food guru’s is Kimberly Snyder. Her books, website, and podcasts are such an awesome resource for anyone seeking to improve their health and looks naturally through diet and lifestyle. This smoothie is inspired by her Glowing Green Smoothie, a fresh concoction designed to boost your glow from the inside out. It’s my go-to smoothie when I want to reboot. That was exactly what I was going for when I created this blend. I put my own spin on it, and used plenty of fresh mint for a revitalizing springtime themed sip.

I purposefully left out nuts and nut butters, avocados, chia seeds, protein powders, etc. This smoothie is simply greens and fruits, and I froze the latter so that the end result would be crisp, cool, and frosty.

Glowing Shamrock (Sweet Mint) Green Smoothie

makes two 16 oz servings

  • 1+1/2 cups of cold coconut water (or filtered water)
  • 2-3 handfuls of organic greens (I used spinach, romaine, and Swiss chard)
  • 1 cup chopped organic cucumber
  • 1 cup of organic mint leaves
  • 1 large organic Golden Delicious apple, chopped and frozen (about a heaping cup)
  • 1 frozen banana
  • A few large frozen chunks of watermelon or ice cubes (or frozen coconut water cubes)

Blend the first four ingredients in your blender until smooth. Add the frozen ingredients, and blend again until no chunks remain.

We think that if you’re going to have a green smoothie, this definitely sounds like a delicious way to go. 🙂 We love the combination of ingredients, particularly the use of coconut water with fresh greens and mint; we can never have too much mint in your lives! We can’t wait to enjoy this drink when it gets a little warmer, but first, to go and try and revive our neglected mint pot! ^^’
