Mango-Avocado-Mint Green Smoothie

After a weekend full of birthday cook-outs, cupcakes, and chocolate chip ice cream cookie cups (oh yes!) I felt like I need a dose of green to start my week. This creamy green smoothie was filling, refreshing, fruity, and so satisfying. Although my daughter asked for a “pink” smoothie this morning, I found her eyes wandering to my creamy green concoction. Mamas learn what’s mine is yours very early on, and we happily shared mango infused smoothies out on the deck together, with an occasional break for jumping on her brand new mini-trampoline.

This is the perfect green smoothie, and the touch of fresh mint makes it just a little extra special. Avocado and raw cashews create a creamy consistency, while frozen banana and frozen mango add the perfect amount of cool, fruity sweetness. You’d never guess it has a healthy serving of spinach. Add ice to make it even frostier.

Mango-Avocado-Mint Green Smoothie

Makes 2 servings

Ingredients:

  • 1 + 1/4 cup filtered water or coconut water
  • a handful of raw cashews
  • 3 handfuls of spinach
  • 10-15 fresh mint leaves
  • 2 cups of frozen mango
  • 1 frozen banana
  • 2-3 tbsp of avocado
  • a couple handfuls of ice, optional

Instructions:

Blend the first 4 ingredients until smooth. Then add the remaining ingredients and blend again. Serve immediately.
