Long time, no see, my friends! How is everyone doing? Lately, I’ve been in a bit of a food funk. I’m feeling very “meh” about food and cooking. And recipe creation? It’s not happening. I can’t really explain it, other than the events around the world and here in the states have been weighing heavily on my mind. Combine that with the quiet anxiety I’m having about my daughter starting preschool in a week, and the residual worry I sometimes carry around about the patients I work with at my “real job,” and well, this mama’s brain just doesn’t have any room for dreaming up new dishes and desserts.

Sometimes a break is in order. My hope is that by stepping away for a couple of weeks, some new inspiration will slowly start to float my way.  I’ve been jotting down a few ideas and hopefully will be testing and sharing something new this week.

In the meantime, I thought it might be helpful to share some of my favorite easy, healthy, vegan dinners. I have a feeling many of you also have a heavy heart and a hectic schedule, and maybe you’re in a cooking and food funk too. Hopefully this list will motivate you to get back in the kitchen and excited about dinner again.

The majority of these recipes take 30 minutes or less, with a handful coming in at about 45 minutes. The lentil meatballs and white bean chili barely made it into the list as they take a tiny longer, but since the chili is mostly simmer time and the lentils and quinoa can be made ahead for super speedy meatball making, I decided to keep them on (plus they are both so delicious, and two of my most popular recipes on the blog!).

There’s something for everyone in this list; summer rolls and Asian-inspired noodles, creamy pastas, wraps and sandwiches, soups, tacos, and more. All recipes are of course vegan (dairy, egg, and meat free), plant-based, nutritious, gluten free (or gluten free option), and low oil or oil-free. I threw in a few raw and grain free options as well.
